Popcorn chicken with a dairy-free ranch dipping sauce - a perfect snack for the whole family! To reduce the preparation time, cut the chicken into strips instead of small pieces. No air fryer? Not a problem, just cook on a tray lined with baking paper in the oven at 200 degrees celsius and cook for 15 minutes or until crispy.
Preheat air fryer to 200 degrees celsius (or oven).
Cut the chicken into small cubes.
In one small bowl whisk the eggs.
In another bowl combine the almond meal, vegetable stock, salt and pepper.
Coat one piece of the chicken in the egg mix and then roll in the rest of the ingredients. Set aside and repeat with the rest of the chicken.
Transfer the chicken into the air fryer (or oven) and cook for approximately 12-15 minutes or until crispy and cooked through.
While the chicken is cooking, place all of the sauce ingredients in a small bowl and mix well.
Serve the chicken while hot with the sauce on the side. Enjoy!
