Apple and Coconut Muffins

These muffins make the perfect on-the-go breakfast, lunch box snack, or they are simply delicious served warm with butter right out of the oven!

Ingredients
 2 large (or 3 small) eggs
 1/4 cup butter melted (save a little to grease the muffin tray)
 1/2 cup pure maple syrup
 1.5 cups peeled and chopped apples (save some for the top)
 1/2 cup shredded coconut (save some for the top)
 1 tsp baking soda

Preheat oven to 175 degrees celsius.

Whisk the eggs, butter and maple syrup in a bowl.

Add the apples and shredded coconut. Mix well.

Sift in the rest of the ingredients and mix well.

Grease the muffin tray with a little of the melted butter.

Spoon the mixture into the muffin tray - it should make around 6 muffins.

Add extra coconut and apple to the top of each muffin mixture.

Bake for 20-25 minutes or until cooked through.
