These apple-filled crepes make the perfect breakfast or dessert and will (without a doubt) be a favourite for the whole family. Serve with a drizzle of maple syrup or honey.
Peel and core apples and dice.
In a frypan over a medium heat, add the apples, water, cinnamon and rapadura sugar.
Bring to a boil and then turn down to a simmer.
Simmer for approximately 10 minutes until the water has evaporated and the apple is soft but still holds its shape. Set aside.
Place all crepe ingredients in a food processor or blender and blitz well.
Heat a frypan over a medium heat. Add some butter.
Pour enough mixture to cover a very thin layer in a small frypan.
Loosen the edges with a spatula (to make it easier to flip).
After a minute, flip the crepe and cook for a further minute. Set aside to cool.
Repeat with the rest of the crepe mixture.
Fill the crepes with apple and roll tight.
Repeat with the rest of the apple apple and crepes.
Drizzle with maple syrup.
