These delicious pikelets make a great breakfast or snack option. They will no doubt become a family favourite!

Strawberry Compote
  1/2 cup frozen or fresh sliced strawberries  
  juice of 1 lemon 
  1/4 cup water  
Pikelets 
  2/3 cups milk (we used coconut milk) 
  1 egg 
  2 tsp butter melted (save half for frying)  
  1 apple peeled and chopped into very small pieces (approximately 3mm x 3mm) 
  1 and 1/2 tsp baking powder 
Optional additions 
  Coconut yoghurt or fresh cream  
Directions 
Strawberry compote 
1 Place all ingredients in a pot over a high temperature and bring to a boil.
2 Turn down to simmer for approximately 10 minutes, stirring occasionally until the mixture has thickened.
3 Remove from heat and set aside.
Pikelets
4 Combine milk, eggs, butter and sugar in a bowl and mix well.
5 Add the rest of the pikelet ingredients (but save a little of the butter for the frypan) and mix well.
6 Heat a pan over a medium heat.
7 Spoon some butter into the frypan.
8 Spoon a little of the mixture onto the frypan and fry for approximately 30 seconds on each side. Set aside and repeat with the rest of the mixture.
9 Serve the pikelets with the strawberry compote and yoghurt or cream.
