Avocado Hummus and Baba Ganoush

Set a perfect sharing platter with this silky rich Baba Ganoush and smooth and flavourful Avocado Hummus.

Yields1 Serving
Avocado Hummus
 1 large avocado
 2 cloves garlic
 Juice of 3 limes
 2 tbsp tahini
 1 tbsp olive oil for garnish (optional)
 Coriander leaves for garnish (optional)
Baba Ganoush
 2 medium eggplants
 2 cloves garlic
 3 tbsp tahini
 3 tbsp lemon juice
 1 tbsp olive oil for garnish (optional)
 Flat leaf parsley for garnish (optional)
Avocado Hummus

Add all ingredients into a food processor (apart from the olive oil and coriander) and blitz until smooth.

Scoop into a serving dish and top with the olive oil and coriander.

Serving suggestion – great with carrot and celery sticks or the Mary’s Gone Crackers Original Crackers

Preheat oven to 180 degrees Celsius and line a baking tray with baking paper.

Cut the eggplant in half and place (flat side down) on the baking paper and roast for 45 minutes until soft.

Removed the eggplant from the oven, scoop the flesh into a bowl and discard the skin.

Finely chop the garlic and add to a food processor, along with the eggplant and the rest of the ingredients. Blitz until you reach the desired consistency.

Scoop into a serving dish and add the olive oil and parsley (if desired) for the garnish.
