Store bought ice-cream is often packed full of questionable ingredients. This banana ice-cream is not only delicious but so easy to make and is also made from beautiful nourishing ingredients - absolutely no nasties!
Soak dates over night and freeze bananas overnight.
Drain the dates from the liquid and place in a food processor or Thermomix with the rest of the caramel ingredients and blitz until smooth. Transfer into a bowl and set aside.
Place all of the ice-cream ingredients into a food processor or thermomix and blitz until completely smooth.
Scoop the ice-cream into a shallow glass container and spoon through the caramel.
Eat immediately or store in the freezer in an air-tight container. When removing from the freezer, let sit for approximately 1 hour before eating if frozen solid.
