Blueberry Chia and Seed Bowl

If you have a 1 ingredient pantry like me, this is such a simple, quick and nourishing breakfast to make.

Yields1 ServingDifficultyBeginner
 2 Tbsp sunflower seeds
 1 Tbsp. pepita seeds
 Small handful of macadamia or walnuts nuts
 1/2 cup blueberries
 1 Tbsp goji berries
 ½ tsp Vanilla essence
 2 Tbsp Chia Seeds soaked in a splash of water
 A sprinkle of dried coconut
 1/3 cup homemade yoghurt or homemade kefir

Add seeds, nuts, dates, vanilla, chia seeds, yoghurt, 1/4 cup blueberries and probiotics to a blender and blitz until combined (though still chunky).

Pour the mixture into a bowl and sprinkle with goji berries, the rest of the blueberries, a few more macadamias or walnuts and a sprinkle of dried coconut.
