A beautiful combination of nourishing ingredients, this slice is the perfect little mid-afternoon snack!

Line a loaf tin with baking paper.
Combine all ingredients apart from the slivered almonds or sesame seeds into a food processor or Thermomix. Blitz on high for approximately 30 seconds.
Spoon the mixture into the loaf tin and press down on the mixture with the back of a spoon until the mixture is spread evenly.
Sprinkle the slivered almonds or sesame seeds on top and press down with the back of a spoon to press into the top of the mixture.
Place in the freezer to set for 60+ minutes.
Remove and cut into approximately 12 pieces.
Store in a glass container in the freezer for a firm consistency or the fridge for a softer consistency.

looking at your chewy caramel cashew slice…I can’t do dates or coconut oil, do you know what would be alternatives to this?
Hi Angie, you could swap the coconut oil for any other type of oil or melted butter. It’s just a little tricker with the Dates as it is one of the main ingredients. You could try swapping it for other dried fruit like cranberries, sultanas or dried apricots.
