Coconut Banana Loaf

This is a beautiful gluten free banana bread recipe

Yields10 ServingsDifficultyIntermediate
 1 cup almond meal
 1/2 cup shredded coconut
  1/2 cup brown rice flour
 2 large bananas, extra ripe
 2 eggs
 1 tsp baking powder
 1/2 tsp baking soda
 Pinch of nutmeg

Preheat the oven to 180°C and line a loaf tin with baking paper

In a large mixing bowl, combine the almond meal, shredded coconut and flour

In a food processor, combine all of the remaining ingredients until smooth

Pour wet ingredients into the dry ingredient and fold through until well combined

Bake for 20 Minutes to 25 Minutes, or until a skewer comes out clean when inserted

    Can you substitute the brown rice flour with another flour. I have coconut flour or Buckwheat flour at home. Would love to make this as it sounds yummy 😋

    I just made this. I used wholemeal spelt flour instead of brown rice flour, because I had it in my pantry! Its delicious. I will be making this again
