This is a quick tasty meal made fast! It's also gluten free
Create an assembly line of 4 shallow bowls, 1st plate contains the strips of chicken, 2nd plate rice flour, 3rd plate eggs and coconut milk whisked together 4th plate bread crumbs, coconut, salt and pepper.
Take first strip of chicken toss in flour, shake off excess, dredge floured strip in egg and coconut bath, gently toss the chicken strip in the coconut mixture, press and coat on each side.
Place the coated chicken in a large baking pan until finished coating all chicken.
Warm coconut oil and drizzle over chicken strips.
Cook in 180C oven for 20 minutes or fry in a frying pan until golden brown.
Serve with your favourite salad, steamed brocollini and Homemade mayonnaise, guacamole, tomato or BBQ sauce for dipping.
