Cumin Spiced Carrot, Olive & Herb Salad

Looking for a fresh summer salad? Why not try this beautifully spiced herb salad - it's super quick and easy to whip up.

Yields1 ServingDifficultyBeginner
 3 carrots grated
 1 small red chilli, de-seeded and finely chopped (mild or hot)
 1/4 cup chopped coriander
 1/4 cup black olives, chopped (with no preservatives)
 Freshly cracked Changing Habits Pepper
 1 Tbsp lemon juice
 1 Tbsp raw Organic honey
 2 cups fresh Rocket

In a large bowl mix together the carrot, chilli, coriander, salt and pepper, inca inchi oil, lemon juice, honey, and cumin. Serve on plates and sprinkle with olives and drizzle with honey.

Serve on a bed of rocket.

Optional: Add some cooked chicken (organic or free range) pieces or quartered hard boiled eggs.
