This banana bread is great for lunch boxes for both children and adults! Delicious, enjoy!

Preheat your oven to 180 degrees celcius.
In a large bowl, mash your banana, or you can chop them in a blender until the banana is still chunky, and then add to a large bowl.
Add the eggs, sugar, cinnamon, salt and bicarb and mix through.
Sift the flour into the mix, and mix thoroughly, then add the melted coconut oil.
Finally, add the chopped nuts which you can also do in a blender until they are still quite chunky.
Mix through a final time, thoroughly.It is quite a thick mix, though you don't need to add any more liquid.
Using excess coconut oil or non-toxic baking paper, line a bread or muffin tin and then scoop out the the mix.
Place in the oven for about an hour, checking at approximately 50 minutes.
Once golden brown, remove from the oven and allow to cool.
Serve warm or cold.
Suggested Servings: Spread with butter, raw honey, pure maple syrup, homemade jam, nut or seed butters, slightly toasted or just enjoy plain.

This is the yummiest cake and a family favourite 🙂 We sometimes mix it up by adding some cacao wafers or shredded coconut through it.
