Emmer Wheat Banana Bread

This banana bread is great for lunch boxes for both children and adults! Delicious, enjoy! Feel free to mix it up and add sultanas, chopped dates or choc chips!

Ingredients
 4 large ripe bananas
 3 free range/organic eggs
 1 generous pinch Changing Habits Seaweed Salt
 2 tsp bicarbonate soda
 1/2 cup coconut oil melted

Preheat oven to 180 degrees celcius.

In a large bowl, mash 3 bananas, or you can chop them in a blender until the banana is still chunky, and then add to a large bowl. Save one banana to slice for the top.

Add the eggs, sugar, cinnamon, salt and bicarb and mix through.

Sift the flour into the mix, and mix thoroughly, then add the melted coconut oil.

Mix through a final time, thoroughly.It is quite a thick mix, though you don't need to add any more liquid.

Using excess coconut oil or non-toxic baking paper, line a bread or muffin tin and then scoop out the the mix.

Place the sliced banana across the top of the mixture.

Place in the oven and bake for approximately 45 minutes or until cooked through.

Once golden brown, remove from the oven and allow to cool.

Serve warm or cold.

Suggested Servings: Spread with butter, raw honey, pure maple syrup, homemade jam, nut or seed butters, slightly toasted or just enjoy plain.
