Green crunch salad with a creamy green dressing

The perfect side dish that is deliciously crunchy and flavorsome. It goes with just about anything - salmon, white fish, chicken or steak, take your pick!

Yields4 Servings
Ingredients
Salad
 3/4 cup pecans roughly chopped
 2 cups baby spinach leaves finely cut
 1 green apple diced into very small pieces
 2 cups wombok shredded
 1/2 cucumber diced
 2 shallots diced
Green dressing
 1/4 cup sour cream
 juice of 2 lemons
 zest of 1 lemon
 1 clove garlic minced
 1 tbsp dill
 1 tbsp mint
 1 tbsp capers
 1 avocado
 cracked Changing Habits Pepper to taste
 2 tbsp water
Directions

Combine all salad ingredients in a bowl and mix well.

Dressing

Combine all dressing ingredients in a food processor and blitz well.

Drizzle the dressing over the salad.
