Homemade Mayonnaise

This healthy mayonnaise (using Inca Inchi Oil which is high in Omega 3s) is a great way to get your essential oils using real food!

Yields30 ServingsDifficultyBeginner
 1 clove garlic
 Oregano & Thyme (or fresh herbs of choice)
 2 egg yolks (room temperature)
 1 tspn seeded mustard (or dijon mustard)
 1 tbsp lemon juice or apple cider vinegar
 All ingredients should be at room temperature, especially the egg or it can cause your mayonnaise to fail!!!
Thermomix Method
1

Chop garlic and herbs in Thermomix bowl on speed 7 | 5 seconds.

Add egg yolk to TM bowl along with lemon juice or vinegar & salt & pepper & mix speed 5 | 5 sec.

With thermomix spinning on speed 4, start drizzling oil very slowly onto the upside down MC (cap). The oil should drizzle down into the bowl at a steady rate. This stage should take about 3 minutes - 4 minutes.

Your mayonnaise should be lovely and thick! Remove mayo and place in glass jar. * Note: If you don't think you'll use the mayonnaise within a week or so, you can store it in a ziplock bag and squeeze the air out of it - this will help it to keep longer.

In blender or food processor - chop garlic and herbs.

Add egg yolk, lemon juice or vinegar along with salt & pepper.

Blend for approximately 1 minute.

After well blended, start to slowly drizzle in the oil through the lid at a steady pace, this will take approximately 3 minutes. The mayonnaise should start to thicken.

Once the mayonnaise has thickened, place in glass jar.
