Jordan’s Deconstructed Key Lime Pie

Such a simple, nourishing and delicious dessert that will win over anyone!

Filling Ingredients
 Juice and zest of 5-7 limes (just keep adding more to taste)
 1 cup organic cashews, soaked overnight or until soft
 1/4 cup Coconut oil
 1 ripe avocado
 Maleo or raw organic honey to taste
Crunchy Layer Ingredients
 1/2 cups walnuts, crushed and toasted
 Optional Add Ins: Vanilla powder, ginger powder, Changing Habits Ceylon Cinnamon, other nut varieties or if you're allergic to nuts use seeds, Changing Habits Chia Seeds, shredded coconut or flakes etc.

Preheat the oven to 160C. Line a baking tray with paper.

In a bowl add the walnuts, sugar and salt and any other chosen add ins. Mix together and begin to break the nuts down roughly with your hands.

Once done, pour onto the tray and bake until crunchy and golden (just keep an eye on it as the time will depend on your oven).

Once ready, remove from the oven and allow to cool.

To a food processor, thermomix or good quality blender add all the filling ingredients and blitz until smooth and creamy.

Spoon a little of the crunchy mixture into the bottom of a few glasses. Then spoon the key lime mixture on top evenly.

Place in the fridge to chill and set for a few hours.

Once ready sprinkle the rest of the crunchy mixture on top, serve and savour every little bite!
