Lemon Sago Pudding

Sago makes a light dessert and this lemon version is great served with fresh fruit.

Yields1 ServingDifficultyBeginner
 1/2 cup Sago
 Juice of 2 organic lemons
 1 tsp lemon zest
 4 tbsp Pure Maple Syrup
 2 1/3 cup of filtered water

Combine sago and water in a saucepan

Boil until translucent, stirring occasionally.

Remove from stove and add the rest of the ingredients.

Mix well and pour into moulds or small glass and leave to set in the fridge.

Serve with fresh seasonal fruit, yoghurt or kefir.
