Delicious and nourishing, this zesty treat will be a great way to keep hydrated throughout the warmer months of the year. Made with coconut water for a great natural source of electrolytes.

Ingredients
 1 litre coconut water
 1 cup lemon juice
 1/4 cup honey
 1 tbsp lemon zest (optional)
Directions

Pour the coconut water into an ice tray and freeze for 3+ hours.

Heat a pot over a medium heat. Add the lemon and honey (and optional zest).

Stir until the honey dissolves.

Remove from heat and pour into another ice tray and freeze for 3+ hours.

Transfer both the coconut water ice cubes and the lemon ice cubes into a Thermomix or blender and blitz until smooth.

Transfer into an air-tight container and store in the freezer. Remove from the freezer 5-10 minutes to soften before eating.
