Macadamia “Cheese”

Looking for a plant-based cheese to add to salads, vegetables, fritters or smashed avo on toast? Look no further! This macadamia cheese will be sure to please.

Ingredients
 1 1/2 cups macadamia nuts
 3/4 cup filtered water
 3 tbsp fresh lemon juice
 1 tbsp apple cider vinegar
 2 cloves garlic
 1 tsp dried oregano
Directions

Place macadamias and water in a bowl, cover and refrigerate overnight.

Drain the nuts and add all ingredients to a food processor or Themomix and blitz until it forms a smooth and creamy consistency,

Wrap the mixture tightly in baking paper and place in the fridge to set overnight.

Remove from the fridge and crumble the cheese into a bowl. Serve with just about any type of meal - salads, fritters, vegetables, avo on toast, etc.

Store in the refrigerator for up to a week.
