Pickled Green Papaya Salad

One of our team members brought in some green papayas from her tree the other week. Lynn from dispatch quickly grabbed one and took it home and made her very traditional pickled green papaya, which we all loved here in the office. So I just had to share this recipe with our community!

 1 medium-large green papaya, grated
 1 cup apple cider vinegar
 1 cup water
 1 red capsicum, julienned
 1 red onion, finely sliced
 1 carrot, grated
 2-3 birds-eye chillis (or to your taste)
 large knob of ginger, julienned (or to your taste)

Soak the grated green papaya with 4 Tbsp seaweed salt, leave it for a couple hours or overnight

Rinse thoroughly and squeeze out the excess moisture and set aside.

Heat the water, sugar & salt together until dissolved and allow to cool

Add apple cider vinegar to cooled sugar syrup

Add capsicum, carrot, chillis and ginger to the green papaya mix

Pour liquid over the papaya mix and mix well

This is great as a condiment or use as a side salad to your meal
