Pumpkin brownie recipe

A beautifully textured brownie that includes a hidden vegetable - nobody will pick up on it unless you tell them!

 1 cup cooked and mashed pumpkin
 2 eggs
 3 tbsp coconut oil melted
 10 Changing Habits Dates chopped
 1 tsp vanilla essence
 1/2 tsp baking powder
 1/2 tsp baking soda
 2 tbsp apple cider vinegar
 2 tbsp coconut flour

Preheat oven to 180C. Grease or line a loaf tin.

Add all ingredients into a bowl and mix together until evenly combined.

Pour the mixture into the tin and spread evenly.

Place in the oven and bake for approximately 45 minutes or until cooked through.

Remove from the oven and allow to cool for 15 minutes. Then transfer to a wire rack and allow to cool for a further 30 minutes.

Store in the refrigerator.
