Nutty Rocky Road with Espresso Marshmallows & Turkish Delight

Nothing beats homemade rocky road especially when the marshmallows, jelly and chocolate are homemade so we know there are extra hidden nutrients and goodness included in this delectable treat compared to store brought. You could always change the ingredients and add in things you love and experiment with different flavours of jelly and marshmallow. Yum!

Raw Chocolate Ingredients
 3 tbsp coconut oil
 3 tbsp maple syrup or honey or opt out if you like bittersweet chocolate
Filling Ingredients
 1 cup organic puffed rice
 2 nuts of your choice, we used roasted Almonds, macadamias and cashews roughly chopped. You could add in seeds also.
 1 cup homemade Marshmallows cut up, we used Espresso Marshmallows
 1 cup homemade Jelly cut up, we used Turkish Delight Gummies
 1 cup shredded coconut
 1/4 cup goji Berries

In a medium saucepan on low heat melt down cacao melts and coconut oil until smooth

Add maple syrup or honey and stir until combined through, remove from heat and let cool a little while you prepare the filling

Line a baking dish or tray with baking paper

Add all the filling ingredients to a bowl and mix around and pour in melted chocolate mix

Gently combine all the ingredients until coated in melted chocolate

Pour into prepared tin and pop in the fridge to set for a few hours

Cut into chunks and enjoy! Store in fridge in airtight container until required.
