Roasted Sweet Potato in Coconut Orange Sauce

A delicious and satisfying side dish - you can replace the sweet potato with carrots, pumpkin or any vegetable that you desire!

Yields1 ServingDifficultyBeginner
 2 large sweet potato’s - peeled and cut into 2 cm squares
 zest of one orange
 juice of one orange
 2 cm fresh ginger - peeled and grated
 2 tbsp Changing Habits Coconut Oil - in it’s liquid state (slightly heated to 30C will do this)
 2 tbsp sesame seeds

Place all ingredients for the sauce into a bowl and mix, then add the sweet potato and coat well.

Place in baking dish and cook on 180C until vegetables are tender and golden brown.
