Spiced Christmas Cake Muffins

Make these beautiful spiced muffins for Christmas to share with your family and friends.

 1 cup Changing Habits Dates, soaked in hot water for no less then 5 minutes
 90g coconut oil
 2 organic, free range eggs
 1 vanilla pod, scraped or 1 Tbsp homemade vanilla essence
 1 cup almond meal
 1/2 cup tapioca flour
 1 1/2 teaspoons bicarb soda
 1 tsp of Changing Habits Cinnamon (or more if you love cinnamon)

Preheat oven to 180 degrees.

Start soaking the dates in hot water.

In a large bowl, add sugar and coconut oil and mix together thoroughly with a whisk.

Add eggs and mix thoroughly again. Add the vanilla, tapioca flour, almond meal, ginger and cinnamon.

Pulse the dates and cacao melts in a food processor leaving them both still slightly chunky.

Add the date and cacao mix into the other ingredients and mix well together with spoon.

Use a little coconut oil to line a muffin tray or cake tin (or whatever you would like your dessert shape to be!) and spoon the mixture out.

Place the tray into the oven and cook for approximately 30 minutes (will need less time for the muffins), however keep checking by putting a skewer into the cake/muffin, if the skewer comes out clean, then it is cooked.

You may serve with a homemade chocolate sauce or ganache and/or thick organic cream, yoghurt or kefir.

    Awesome Christmas morning breakfast. My family of 5 all give a thumbs up1 I enjoyed these topped with a dab of yogurt. Next time I want experiment with another sweetener and attempt to make a bit less sweeter

    We have made these a number of times now, sometimes adding in sultanas. Simple and they freeze well too.
