Spiced steak with a mango salsa

An ideal summer meal, bursting with flavour and packed with nutrients! Simple to prepare and wonderfully satisfying.

Ingredients
 2 steak fillets
 1 clove garlic minced
 2 tsp olive oil
 juice of 1 lime
 1 mango peeled and diced (or 1/2 papaya)
 1 fresh chilli desseded and sliced
 1 tomato diced
 1/2 cucumber diced
 2 tbsp spanish onion diced
 1 avocado peeled and diced
 small handful or coriander or flat leaf parsley with lime wedges
 cracked Changing Habits Pepper to taste
Directions

Place the steak in a shallow dish and massage the garlic, cumin, coriander powder, ginger powder, chili powder, olive oil and juice of 1 lime into each side.

Heat a pan over a medium-high heat. Once the pan is hot transfer the steak and cook for 3 minutes on each side. Set aside to rest for 5 minutes.

In a bowl combine the diced mango, chilli, tomato, cucumber, onion and avocado. Mix well. Season with salt and pepper.

Once the steak has rested, slice into pieces.

Serve with fresh coriander or parsley with lime wedges.
