Sugar-Free Chocolate Peppermint Bliss Balls

These beautiful Sugar-Free Chocolate Peppermint Bliss Balls make a satisfying treat with a great hit of peppermint.

Yields12 Servings
 2 cups shredded coconut
 1/4 cup Changing Habits Cacao Melts (melted)
 1 cup pepitas
 15 drops stevia (or more to taste)
 4-6 drops of good quality peppermint essential oil
 2 tbsp nut butter of choice
 2-3 tsp vanilla extract

Blend the shredded coconut in your food processor or Thermomix until as fine as possible.

Add the pepita seeds and blend until completely broken down.

Add the remaining ingredients and blend until evenly combined.

Scoop the mixture into a bowl and place it into the fridge to harden for 20-30 minutes.

Now begin rolling the mixture into balls using your hands.

Place the bliss balls into a container and store in the fridge.
