Mexican Turmeric Mince with Sneaky Greens

Mix up your classic mince recipes with this beautiful spice medley! Serve as is, with extra veggies or salad on the side, with sweet potato chips or simply with a fried egg or avocado on top.

 500g organic or grass-fed lamb or beef mince
 1 large zucchini, thinly sliced into rounds
 1 tsp cracked Changing Habits Pepper
 1 tsp paprika powder
 3 cloves of garlic crushed
 1/2 -1 onion, diced
 3 -4 cups of rocket or spinach
 2-3 rashers of bacon (preservative free), diced
 coconut oil or butter for cooking in
Optional
 chilli, other spices and herbs, lemon juice, coconut aminos or tamari to taste

Add the onion, sliced zucchini and bacon to a large frying pan with a small amount of coconut oil or butter and fry until golden on medium heat.

Scoop this into a bowl leaving as much fat in the frying pan as possible.

Now add the mince and garlic to the frying pan and cook the until browned all over. Add the spices, salt, pepper and stir through until evenly combined.

Add the cooked onions, bacon and zucchini and mix through.

Now turn off the heat and add the rocket leaves and fold through until wilted.
