Caramelised Onion and Goats Cheese Quiche

Quiche is always a great option to include for meal preparation, as it lasts in the fridge for up to 5 days. Pair with a side salad or a side of greens to make a beautifully balanced meal.

Ingredients
Crust
 2 tbsp butter
 1/2 cup water
Filling
 1 and 1/2 brown onion sliced thinly
 3 tbsp olive oil
 6 eggs
 cracked Changing Habits Pepper to taste
 1/3 cup goats cheese
Directions

Place the flour, butter, salt and pepper in a food processor and slowly add the water while blitzing.

When it forms a ball, sprinkle some flour on the bench and remove the dough from the food processor.

Knead the dough for 30 seconds.

Roll into a circle with a rolling pin.

Melt some butter or use olive oil to grease a shallow dish.

Transfer the dough into the dish and press down firmly to create the base, trim the edges to make it even. Set aside.

Filling

Heat a pan over a medium low heat. Add half of the olive oil and thinly sliced onions. Cook for 15 minutes stirring occasionally and then add the rest of the oil and the rapadura sugar. Cook for a further 15 minutes.

Preheat oven to 180 degrees Celsius.

Remove the onions from the heat and cut roughly. Transfer the onions into a bowl with the rest of the filling ingredients. Mix well.

Pour the mixture into the base and bake for approximately 30 minutes or until cooked through.

Remove and serve warm with a side salad or a side of greens.
