Packed with flavour, these Chicken Lettuce Tacos make a great lighter main dish. Simple, fresh and healthy!
Heat oil in a pan on medium heat.
Add the chicken, garlic, onion and salt and pepper and cook until chicken is cooked through.
Add the carrot, capsicum and mushrooms and all of the sauce ingredients and stir continuously.
Once cooked, set the ingredients aside in a bowl to cool.
Once cooled, add the avocado and mix well.
Prepare the lettuce leaves and spoon the mixture evenly into each of the lettuce leaves.
Garnish with coriander, chilli and a good squeeze of lime juice.
