Chicken Lettuce Tacos

Packed with flavour, these Chicken Lettuce Tacos make a great lighter main dish. Simple, fresh and healthy!

Ingredients
Filling
2 tsp olive oil
2 chicken breasts, chopped into very small pieces
2 cloves garlic, minced
1 brown onion, diced
1 carrot, peeled and grated
1 small capsicum, diced
4 mushrooms, chopped
Sauce
Juice of 1 lime
1 tbsp peanut butter
2 tbsp tamari or coconut aminos
0.25 cup coriander, chopped
Half a chilli, deseeded and diced
To Serve
8 cos lettuce leaves
1 avocado, chopped
Lime wedges, coriander, fresh chilli, crushed peanuts or cashews for garnish (optional)
Directions
1 Heat oil in a pan on medium heat.
2 Add the chicken, garlic, onion and salt and pepper and cook until chicken is cooked through.
3 Add the carrot, capsicum and mushrooms and all of the sauce ingredients and stir continuously.
4 Once cooked, set the ingredients aside in a bowl to cool.
5 Once cooled, add the avocado and mix well.
6 Prepare the lettuce leaves and spoon the mixture evenly into each of the lettuce leaves.
7 Garnish with coriander, chilli and a good squeeze of lime juice.
