Choc Energy Protein Bar

This is a fantastic snack to give you lots of energy and packed with goodness!

Yields1 ServingDifficultyBeginner
 1 cup quinoa flakes
 1/2 cup sunflower seeds
 1/2 cup pepita seeds
 1/2 cup ground chia meal
 1/2 cup dried apricot halves
 1/2 cup almonds
 1/2 cup sultanas
 1/2 cup Changing Habits Dates soaked in warm water until soft
 1/2 cup coconut flour
 1/3 cup real maple Syrup, honey or Maleo
 1 vanilla bean, scraped
 2 organic free range eggs
 2 Tbsp Changing Habits Inca Inchi Powder

Preheat the oven to 180C.

Grease a rectangular baking pan with butter or Changing Habits Coconut Oil

Place all ingredients except the syrup, vanilla and eggs in a food processor or thermomix and pulse until the mixture is finely chopped

Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste.

Transfer to the baking pan and spread evenly.

Bake for about 20 minutes.

Cut into squares.
