Chocolate Avocado Mousse Slice

Did someone say Chocolate Avocado Mousse?! Grain free, dairy free, gluten free!

Yields1 ServingDifficultyBeginner
Crust Ingredients
 1 cup Almonds
 1 cup shredded coconut
 1 tbsp coconut oil
Mousse Ingredients
 2 Soft Avocados
 1 cup Changing Habits Dates soaked in 1/2 cup of water
 1/2 tsp homemade Changing Habits Vanilla Essence
 1 tbs Maleo
Thermomix Method
1

Blend cacao melts on speed 8 for 4 seconds.

Melt cacao melts on speed 3, 50 degree for 3 minutes.

Peel avocados and place flesh into bowl.

Add remainder of mousse ingredients and blend until combined then set aside.

Place all crust ingredients into thermomix onto speed 9 for 30 seconds. Spread evenly into a container and pat down until firm. Follow with mousse and spread evenly.

Refrigerate for an hour before serving if you can hold your self back!

Normal Method

Melt cacao melts in a small saucepan on low heat.

In a food processor add all the base ingredients and blitz until well combined.

Press the mixture into a lined container or tray then refrigerate until set.

In a food processor add all the mousse ingredients plus the melted cacao. Blitz until smooth and creamy and there are no lumps.

Pour the mixture evenly over the top of the base and refrigerate until set.

Once ready, cut into squares and store the rest in the fridge.

    Not only is this SUPER easy to make but it tastes amazing and even my fussy daughter loved it! I used a thermomix and made the base first as then all I had to do was give the bowl a quick wipe out and then I made the mousse.
