Coconut and Chia Pudding

We know that the chia pudding has gotten around town, though we couldn't help express how good it is for a lunch box snack. Not to mention it is absolutely divine!! We also add the Changing Habits Probiotics and Colloidal Minerals probiotics into the mix to make it more nutrient dense. A great way to ensure your children are getting what they need.

 1/4 cup chia seeds
 1 1/2 cups coconut milk
 2 tsp Changing Habits homemade vanilla essence

Combine all ingredients in a glass or stainless steel bowl and leave overnight or until all the chia seeds soak up as much liquid as they can (about 30 mins).

You want it to be loose, not solid, so if it is too dense and not liquidy enough, add some more coconut milk.

Serve with extra cinnamon on top and some blueberries. If you're using frozen blueberries and it's for a snack throughout the day, you can let them defrost as the day goes on. Otherwise, let the blueberries defrost an enjoy it straight away.
