Magic Quiche

Who doesn't love a quiche! This is a quick easy quiche to make and doesn't require pastry. In fact I call it magic quiche because it forms its own crust!

Yields1 ServingDifficultyBeginner
 3 organic free-range eggs
 1/2 cup organic ricotta cheese
 1 cup organic milk
 1 tsp baking powder
 1 tbsp coconut oil (good quality cold-pressed oil)
 1 shallot - chopped
 freshly ground Changing Habits Pepper to taste
 Freshly chopped herbs (basil, coriander, parsley, rosemary or thyme)
 1-2 tomatoes, sliced

Preheat oven to 180C (160C if fan-forced).

Combine all ingredients (except tomatoes) and mix well.

Pour into a glass dish and top with the tomatoes.

Bake for 40 minutes (30 if fan-forced) or until egg is cooked and golden.

Serve with a lovely big green salad.
