Mini Veggie Frittatas

This is a great little snack idea and so easy to make! You can mix up the filling ingredients and add whatever veggies (and meat) you may have in the fridge. Great for a snack on the go, or addition to the lunchbox.

Ingredients
 1 handful spinach leaves chopped
 1/2 capsicum diced
 1/4 spanish onion diced
 1/4 cup goats cheese crumbled
 5 eggs
 Cracked Changing Habits Pepper to taste
Directions

Preheat oven to 180 degrees Celsius. Line a muffin tray with baking paper or muffin papers.

Finely chop the spinach, capsicum, onion and crumble the goats cheese. Place the ingredients in a bowl.

Crack the eggs into the bowl.

Add the cumin and season with salt and pepper. Mix well.

Spoon the mixture into each cup, it should make approximately 12 small.

Bake for 20-25 minutes or until cooked through.
