Onion and Mixed Cheese Tart

This tart is delicious straight out of the oven and also the following day cold. Have it with a yummy salad.

Yields1 ServingDifficultyBeginner
 1 tbsp coconut oil or ghee
 3 onions halved and sliced
 1 sheet frozen butter puff pastry
 50 g good quality feta cheese, diced
 50 g good quality cheddar cheese, grated
 125 ml pure sour cream
 2 organic free range eggs
 1/4 tsp freshly ground Changing Habits Pepper
 Paprika to taste
 Optional: Add in fresh herbs, spices or other vegetables

Pre heat oven to 180 degrees Celsius

Defrost pastry.

Gently saute onion in oil until onion is golden and cooked through.

Grease 26 cm pie plate with oil. Place pastry over plate and gently push into the shape of the plate.

Beat eggs and sour cream in a small bowl. Add salt and freshly ground pepper.

Place onion in the tart, cover with the cheeses and gently pour over the egg and cream mix. Sprinkle lightly with paprika.

Cook for 30 - 40 minutes until pastry is golden brown and mixture has set.

Serve with salad and lightly steamed green beans.
