Raw Pistachio Slice

A great recipe for pistachio lovers! A beautiful, bite-sized treat.

Base
 1/2 cup pistachios
 1 tbsp maple syrup
 2 tbsp coconut oil
 1/4 cup shredded coconut
Top Layer
 1/2 cup pistachios (pre-soaked for 2+ hours and drained)
 1/3 cup cashews (pre-soaked for 2+ hours and drained)
 3 tbsp maple syrup
 2 tbsp coconut oil
 1 1/2 tsp vanilla essence
Garnish
 1/4 cup pistachios, crushed

Combine all base ingredients in a food processor or Thermomix and blitz until it forms a fine consistency.

Line a small container (approximately 12cm x 12cm). Spoon the base mixture into the container and flatten down with the back of a spoon to create the base. Place in the freezer for 10 minutes to set.

Place all top layer ingredients into a food processor or Thermomix and blitz a few times until completely smooth.

Remove the base from the freezer and spread the top layer ingredients evenly over it. Return to the freezer for approximately 30 minutes.

Remove from the freezer and garnish with crushed pistachios and cut into bite-sized pieces. Store in the refrigerator.
