Slow Cooked Beef Barbacoa with Lettuce Cups

Barbacoa is a Mexican meal made with beef, goat or lamb. The meat is slow cooked until very tender and super delicious! Try this version with lettuce cups and satisfy the cravings without over indulging!

Ingredients
 1 Spanish onion, diced
 3 cloves garlic, crushed
 1 kg beef (we used brisket)
 3 tbsp tomato paste
 1/4 cup fresh lime juice
 50 ml apple cider vinegar
 3 bay leaves
 2 tbsp Changing Habits Beef Broth with 500ml water
Garnish
 1 handful coriander
 1 handful flat leaf parsley
 Lime wedges to serve
 2 bunches of cos lettuce
Directions

Cut the beef into 4 pieces and heat with the onion and garlic over a medium heat for approximately 3 minutes until lightly seared.

Add all remaining ingredients into a measuring jug/bowl and stir well.

Place all ingredients into the slow cooker and cook on low for 8 hours.

Serve with herbs, lime wedges and cos lettuce leaves.
