A great simple recipe for a mildly spiced tomato relish. You can add more spices if you prefer a bit of extra heat! Great as a side to a vegetable dish, or with eggs or cheese and crackers.
Heat olive oil in a pan on a medium heat. Add the onion and garlic and stir until soft and fragrant.
Add the tomatoes and cook for about a minute.
Add the apple cider vinegar, sugar, salt, pepper, cumin, ginger powder, garam masala, chilli powder and curry powder and continue to stir.
Add the balsamic vinegar and tomato paste and stir.
Turn up to a medium-high heat until the liquid begins to bubble and then turn down to a medium-low heat and simmer for approximately 20 minutes until the mixture thickens slightly.
Remove from the heat and transfer into an air-tight jar and refrigerate straight away.
Once cooled, you can blitz it in a food processor or Thermomix for 1-2 seconds for a smoother consistency, if you prefer, or leave it chunky.
Store in the refrigerator.
