Easy Mango Vanilla Ice-Cream

Who doesn't love Mangoes??? Take advantage of making as many yummy things as possible while they are in season. Especially this super yummy Mango Ice-Cream.

 300ml cream (we used organic)
 300ml full fat milk (we used organic, pasteurised only)
 1 Tbsp vanilla essence
 1-2 Tbsp raw honey
 5 ripe mangoes + 1 extra for garnishing, sliced
 Optional: 1/4 cup cashew or macadamia nut butter to add extra creaminess

Add cream, milk, vanilla, honey and 5 mangoes to a blender and blitz until smooth, creamy and well combined. Taste the mixture and adjust if needed.

Pour the mixture into an ice-cream maker, following its instructions. Our ice-cream didn’t need too long to be churned and was ready in roughly 25-30 minutes, however some ice-cream makers may differ and need longer.It will also depends on your personal preference on whether you like your ice-cream softer or harder.

When ready scoop out into bowls and top with the sliced mango.

Store the rest in the freezer.

    Being dairy intolerant, will this recipe work and taste okay by replacing cow’s milk etc with coconut cream and coconut milk? Thank you?
