A wonderfully warming, nourishing and healing soup. Packed full of amazing nutrients to help boost the immune system just in time for winter!

Ingredients
Soup
 1 tbsp olive oil
 1 onion diced
 3 stalks of lemongrass (outer layers removed) diced
 2 cloves garlic, minced
 4 tbsp ginger grated
 750 g chicken thighs
 2 tomatoes diced
 4 cups water
 juice of 1 lime
 cracked Changing Habits Pepper to taste
 2 stalks celery diced
 2 carrots peeled and diced
 2 kaffir lime leaves
To Serve
 2 zucchinis spiralized (or vermicelli noodles work well with this recipe)
 lge handful fresh coriander leaves
 2 tbsp dried chili flakes
 extra salt and pepper if needed
Directions

Over a medium heat, add the olive oil into a frypan.

Add the onion, lemongrass, garlic and ginger and cook until soft and fragrant.

Add the chicken thighs and cook for about 2 minutes on each side.

Transfer into the slow cooker with the rest of the ingredients and mix well.

Cook on low for 8 hours.

To serve

Serve straight out of the slow cooker into bowls on top of the zoodles or vermicelli noodles.

Top with coriander and chilli flakes.
