Quinoa, Spinach & Feta Muffins

Who doesn't love a delicious but ridiculously easy to make snack? These muffins also make a great little side dish or salad topper.

Ingredients
 1 & 1/2 cups cooked and cooled Quinoa
 2 shallots diced
 2 cloves garlic minced
 1 cup almond meal
 5 eggs
 100 feta cheese crumbled
 2 tbsp fresh dill
 2 cups chopped baby spinach
 cracked Changing Habits Pepper to taste
 1/2 cup pine nuts lightly toasted
Directions

Preheat oven to 180 degrees Celsius.

Line a muffin tray with baking paper.

Combine all ingredients in a bowl and mix well.

Spoon the mixture into the muffin tray.

Bake for 15 minutes or until cooked through.
