A super quick and nourishing dessert or snack to whip up that includes probiotics and is packed full of good quality fats, proteins, nutrients, minerals and antioxidants.
Melt 1 cup (leave the 1/2 cup aside for later) of the cacao melts in a small saucepan on low heat, stir until melted.
Add all ingredients (+ 1/2 cup cacao melts that were put aside) to a thermomix or good quality blender and blitz until desired (you can leave the nuts slightly chunky or blitz until smooth).
Taste the mixture and add the additional honey, only if needed (it should be sweet enough with the dates, however does help with the texture).
Press the mixture into a container or slice tray evenly and place in the fridge.
To the same saucepan that you used previously add the cacao melts and oil or ghee and melt on low heat.
Once melted, remove from the heat and add all other ingredients and the honey to taste.
Remove the slice from the fridge and drizzle the melted cacao over the top, then return to the fridge to set.
Once ready remove from the fridge, slice into squares and enjoy.
Store in the fridge.
