Spiced Pumpkin Soup

Quick, easy and delicious soup to nourish your body and soul.

 700g pumpkin - peeled and chopped
 550g chicken broth or vegetable stock
 1 brown onion - peeled and roughly chopped
 3 large garlic cloves - peeled and halved
 3cm knob ginger (about 2 tbsp) - or to taste
 3 Tbsp coconut oil

Place all ingredients in a pot or Thermomix and simmer for approximately 20 minutes, then blend until smooth. (If you want a deeper and richer flavour, pre-roast the pumpkin, onion and garlic together until golden).

As you can see in the photograph, we have topped the soup with our beautiful Beetroot Hummus.

Suggested Serving: You could also top this with home made kefir, yoghurt or cultured sour cream and with some toasted home made bread.
