Strawberry and macadamia muffins

Dairy free and refined sugar free, these muffins will be sure to be a hit with the whole family!

Ingredients
 3/4 cup coconut yoghurt
 3 tbsp coconut oil melted (save a little to grease the muffin tray)
 2 eggs
 1/3 cup coconut milk (or almond milk)
 1 tsp vanilla essence
 1 tsp baking soda
 1.5 cup chopped strawberries
 1/3 cup chopped macadamias
Directions

Preheat oven to 180 degrees Celsius.

Grease the muffin tray with a little of the coconut oil.

Whisk yoghurt, coconut oil, rapadura sugar, eggs, coconut milk and vanilla in a large bowl.

Slowly mix in the flour, baking soda, cinnamon, strawberries and macadamias. Save some of the strawberries for the tops of the muffins.

Spoon the mixture into the muffin tray and top with extra strawberries.

Bake for approximately 30 minutes or until cooked through.
