The perfect little snack to help boost energy in between meals.

Ingredients
 1/2 cup shredded coconut
 1/4 cup pumpkin seeds
 1/4 cup sunflower kernels
 2 tbsp coconut oil
Directions

Place the shredded coconut in a food processor or Thermomix and blitz on high for 5 seconds. Remove and transfer onto a plate.

Place the rest of the ingredients into the food processor or Thermomix and blitz on high for approximately! 15 seconds.

Use a tablespoon to measure some of the mixture and roll into a ball. Roll the ball in the coconut and set aside.

Repeat with the rest of the mixture.

Store in the refrigerator or freezer.
