Mezze Platter

This Mezze platter is perfect for entertaining, or as a fun vegetarian dinner for the family, It is made up of a delicious combination of falafel, tzatziki, hummus and greek salad.

Ingredients
Falafel
 3 cups dried chickpeas (soaked in water overnight)
 3 cloves garlic minced
 1/2 Spanish onion diced
 juice of 1 lemon
 1/2 cup flat leaf parsley
 1/4 cup chickpea flour
 2 tbsp fresh dill
 2 tbsp sesame seeds
 2 tbsp olive oil (for frying)
Hummus
 1 can chickpeas
 juice of 2 lemons
 1/3 cup hulled tahini
 1/2 tsp paprika
 2 tbsp water
Tzatziki
 1 cup greek yoghurt (use coconut if you would prefer to keep it plant based)
 2 tbsp dill finely chopped
 2 tbsp cucumber finely diced
 juice of 1 lemon
 2 tbsp mint finely chopped
 cracked Changing Habits Pepper to taste
Greek Salad
 1/2 cucumber finely diced
 1 tomato finely diced
 2 tbsp parsley finely chopped
 1 tbsp spanish onion finely chopped
 1/3 cup feta cut into cubes
 1/2 cup black olives
Optional Garnish
 Cherry tomatoes
 baby cucumber
 extra herbs
 handful baby spinach
Directions
Falafel
1

Place the dried chickpeas in a large bowl and cover with filtered water. Cover and soak overnight.

Drain the chickpeas from the water and place in a food processor or Thermomix with the rest of the falafel ingredients and blitz for approximately 10 seconds. You want the mixture to still be slightly chunky and not too smooth.

Heat a fry-pan over a medium-high heat. Add some olive oil.

Shape the falafel mixture into small round patties and fry on each side for approximately 3 minutes or until they begin to brown slightly. Set aside.

Hummus

Place all hummus ingredients apart from the water and paprika into a food processor. Blitz until smooth. Add water if needed until you reach the desired consistency.

Transfer into a bowl and sprinkle with paprika. Set aside.

Tzatziki

combine all tzatziki ingredients in a bowl and mix well. Set aside.

Salad

Combine all salad ingredients in a bowl and mix well.

Assembly

On a platter, transfer the salad to the centre. Place the hummus and tzatziki at each end. Place the falafel around the edges.

Garnish with cherry tomatoes, baby cucumbers and extra herbs.
